Lars Eighner’s essay has many different points of advice about how to live off of dumpster diving. Lars stats that most food is thrown out for good reasons, but there is a lot of good food thrown out also. A lot of food is thrown away just because it has minor things wrong with it, but these things can be avoided and the food would still be good. Lars’s example of this was “Chocolate is often discarded only because it has become discolored as the cocoa butter de-emulsified.” But you must be careful and still make sure it was good. Lars would sometimes find items such as cheese that had a spot of mold he could just pare it off and eat the cheese, but if the cheese looked perfectly normal, it had to be examined more careful.
