The food we take in is broken down into three energy nutrients in the course of digestion: proteins, fats and carbohydrates. It is through the bioenergetic conversion of these nutrients that our bodies are able to function and we are able to carry out physical activity. The most abundant organic substances in nature, they are essential for human and animal life. They come to us almost entirely from foods that originate from plants, such as vegetable, fruits, and grain based foods, such as bread and pasta. Glucose is the usual form in which carbohydrates are assimilated by animals. It is stored within skeletal muscle and within liver as glycogen.
