Yr 12 Biology :Protein Digestion Experiment 16th May 2000 Aim:- 1. To illustrate the digestion of protein albumen 2. To illustrate that digestion of albumen by pepsin requires an acid environment Hypothesis:- Test tube 3 will go clear due to pepsin being present in an acidic environment. Theoretical basis:- The digestion of protein occurs in many stages, with different enzymes hydrolysing different peptide bonds between specific amino acids. ... Egg white, composed of the protein albumen, is clear and will not readily display digestion unless it’s state is changed. ... Digestion of this solid white matter results in a clear liquid. ... A change in temperature may be responsible for the rate at which the enzymes are able to breakdown protein molecules. ... The experiment also found that pepsin by itself digests the protein albumen very slowly. ... The experiments show that pepsin does needs an acidic environment to digest the protein albumen.
